Don’t forget that Mother’s Day is in May and this year it’s May 10, 2020! Going into the fifth week of quarantine, this year is going to be extra special to show our appreciation to moms, who have been 24/7, 7 days a week staying home with the kiddos! It’s time for daddys and the kids to show how much we love our moms and appreciate all of her hard work during this difficult time. What can we do while staying at home and all the shops are closed? If you are planning to order something special online, it is highly recommended you do so NOW. Shipping times from different stores are taking longer than usual because of COVID-19 and the increase of online orders. On another note, there may be more you can do than just ordering things online and here are some ideas we want to share with you. 

Mother’s Day Brunch / Afternoon Tea

Treat mom with a surprise brunch or afternoon tea with some tasty bakeries. Get up early and prepare a surprise brunch when she wakes up, she can be lazy for the day and eat her brunch right in bed. If waking up early isn’t an option, let’s create an afternoon tea party to enjoy a relaxed Mother’s Day afternoon.

Here are some simple recipes for home-made, kid-friendly pancakes and cheesecakes:

Pancakes:

  • 1 1/2 cup flour
  • 3 teaspoon baking powder
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 2 teaspoons butter (melted)
  • 1 1/4 cup milk
  • 1 egg

Just mix the flour, baking powder, sugar and salt first, then add the rest ingredients together. Mix well until it’s smooth. You can now help the little one to cook it on the stove top. One simple tip is to make sure only flip the pancake to the other side when it’s filled with small bubbles.

Cheesecake:

I recently found a very simple cheesecake recipe and it’s even simpler if you have an airfryer at home.

  • 250g cream cheese
  • 80g sugar
  • 1 egg yolk
  • 2 egg
  • 170g whipped cream
  • 0.5g vanilla extract
  • 6g cake flour
  • Mix the sugar into the cream cheese until it’s softened and smooth.
  • Add the egg yolk and mix it.
  • Add the other 2 eggs and mix it again.
  • Add the whipped cream and vanilla extract, and mix well.
  • Sift the cake flour into the mixture and mix it till smooth.
  • Pour the mixture onto a 6-inch cake pan with baking paper
  • Preheat air fryer (oven) to 200C for 10 minutes
  • Bake it for 18-21 minutes at 180C (it’s normal to have a burned surface and you can shorten the baking time depends on the desired level of brown colour on the surface)
  • Let it cool and put it into the fridge for 8 hours before eating it.

Prepare a set of tea or a cup of coffee to enjoy a warm afternoon day with the best mom in the world.

Mother’s Day Party

With staying home over a month now, mothers are missing their alone time with their besties. Before coronavirus and social distancing, we as mothers most treasure time (probably) is to get away from the kids and husband for a bit, either hanging out with our girlfriends or pampering ourselves by going to nail or hair salon. While this is quite not possible at the current situation and not foreseeing to resolve in two weeks, daddies and the kids can help arrange a video conference party for the moms and their girlfriends on Mother’s Day.

It could be a fun 40 minutes to an hour for mothers to share how they could survive the past few weeks at home with the kids alone most of the time!
